Getting Egg Timings Right
You've probably heard various guidelines for cooking the perfect soft boiled egg. Probably to put them in boiling water for about 7-8 minutes. The truth is, the time it takes is heavily influenced by the temperature and size of the egg. An M egg at room temperature might take less than 5 minutes, while an L egg at refrigerator temperature might take about 7,5 minutes. So you can either memorise all the different combinations or use a calculator. While it can be fun to do the thermal modelling yourself, it may be a bit much for everyday cooking. I normally drop my eggs in boiling water, so I put the time to boil to 0:00, and either put the egginess to 50 for normal soft boiled eggs or if I want more jammy egg yolks to 60. Next time you cook eggs, give it a try!
